Cauliflower Tomato Salad

This cauliflower and tomato salad can provide phytochemicals, folate, fiber and all essential nutrients for a healthy body. This is a must have in perimenopausal problems.
 
INGREDIENTS

Cauliflower florets - 2 cups
Small tomatoes (slices) - 2 cups
Olives - 2 cups
Minced Garlic - 2-3 no.
Coriander leaves (chopped) - few stalks
Oregano - 1 tsp
Chili flakes - 1 tsp
Vinegar - 2 tsp
Pepper powder - 1 tsp
Olive Oil - 2 tsp
Salt - to taste

METHOD
 
  1. • Boil the cauliflower with a pinch of salt for 7 to 10 minutes.
  2. • Drain the water and then add the tomatoes and olives.
  3. • For the salad dressing, mix together the olive oil, vinegar, oregano, chili flakes, garlic, coriander leaves, salt, and pepper.
  4. • Mix the salad dressing with the vegetables, and chill the salad for 1 hour in the fridge.
  5. • Serve chilled
