Cucumber Chutney  


This is a tasty recipe that can be used as a side serve with food and aids in healthy digestion.
INGREDIENTS

Cucumbers - 1/2 kg
Salt - 1/2 tsp
Lime juice - 1 no
Oil - 1/2 tsp
Coriander leaves - A pinch
Turmeric powder - Few
For Seasoning
Channa Dal - 1/2 tsp
Asafoetida - A pinch
Mustard seeds - 1/2 tsp
Red chilies - 3
Fenugreek seeds - 1/4 tsp
Fgreen chilies - 3

METHOD

Peel and finely chop the cucumber. Mix with salt and turmeric in a bowl, set aside for 15 minutes and then squeeze out the excess water. Heats oil in a pan and sauté seasoning ingredients. Grind the sauté ingredients till a fine paste is obtained. Mix the paste and the chopped cucumber till well combined in the end adds lime juice. Serve the chutney garnished with chopped coriander leaves.
