Khandvi is a popular Gujarati snack. It has asoft texture and nutritious.


Chickpea flour (Besan) - 1 cup
Buttermilk (prepared from low fat milk) - 2 cup
Turmeric powder - 1/2 tsp
Asafetida (Hing) - 1/4 tsp
Oil - 1 tsp
Mustard seeds - 1 tsp
Asafetida (Hing) - 1/4 tsp
Green chilies - 1-2 no.
Salt - to taste


  1. • In a large microwave-safe bowl, mix besan (gram flour), buttermilk, turmeric powder, salt and asafetida.
  2. • Cook uncovered in the microwave for 2 min. Remove from the microwave and stir to break up any lumps.
  3. • Microwave again for 2 min and stir again.
  4. • Microwave for the last 2 min and mix well.
  5. • Lay out an aluminum foil in long sheets. Spoon the batter along one edge of the foil, and with a flat spatula, gently pull the batter down along the foil (spreading it thin).
  6. • Once the foil is completely covered, start on the next piece of foil. Repeat until all the batter is thinly spread.
  7. • Let the batter rest for 5 min and allow it to solidify. With a sharp knife, cut long 2 inch strips.
  8. • Gently lift the edge and roll the strip into a tight roll. Place the rolls on a platter.
  9. • Prepare the tempering by heating oil and adding mustard seeds, green chilies, and curry leaves. Once the seeds start spluttering, pour the oil over the khadvi pieces.
  10. • • Garnish with coriander and serve hot.
